Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    1 Tbsp. vanilla extract
    2 c. coarsely grated zucchini (unpeeled)
    2 c. all-purpose flour
    1 tsp. cinnamon
    2 tsp. baking powder
    1 tsp. salt
    1/4 tsp. soda
    1 c. pecans
Preparation
    Preheat oven to 350\u00b0.
    Grease and lightly flour two 5 x 9 loaf pans. In a large mixing bowl, beat eggs until frothy. Beat in sugar. Add oil and vanilla. Beat until thick and lemon colored. Add loosely packed grated zucchini.
