Low-Fat Lamb Chops With Tarragon-Tomato Sauce - cooking recipe

6 (6 oz.) lean lamb loin chops (1-inch thick)
vegetable cooking spray
1/8 tsp. pepper
1 (8 oz.) can no salt added tomato sauce
2 Tbsp. dry, white vermouth
3/4 tsp. dried whole tarragon
1/8 tsp. garlic powder
3 c. hot cooked parboiled rice, cooked with salt or fat
Preparation

Trim excess fat from chops.
Coat a large skillet with cooking spray.
Place over medium-high heat until hot.
Add chops and cook 4 minutes on each side or until browned.
Remove chops from skillet and drain well on paper towels.
Sprinkle chops with pepper.
Wipe skillet dry with a paper towel.
