Skillet Chicken Dinner - cooking recipe

Ingredients
    2 Tbsp. olive oil or oil
    2 Tbsp. flour
    1 tsp. salt
    3/4 tsp. dried rosemary leaves, crushed
    1/2 tsp. pepper
    1 Tbsp. lemon juice
    2 medium onions, sliced 1/2-inch thick
    4 large chicken thighs (1 1/2 lb.)
    1/2 lb. small red potatoes
    small bunch fresh spinach
    1/4 c. pitted ripe olives, sliced in half
Preparation
    In a 10-inch skillet over medium-high heat, cook onions in oil until golden.
    Remove with slotted spoon to bowl.
    On sheet of waxed paper, mix flour, salt, dried rosemary and pepper to coat chicken thighs.
    In remaining oil in skillet over medium-high heat, cook chicken until golden brown on all sides.
