Larisa'S Hearty Lamb And Rice - cooking recipe

Ingredients
    4 c. lamb, cut in small pieces
    1 c. vegetable oil
    1 1/2 c. rice
    3 carrots, shredded as fine as you can get them
    salt to taste
Preparation
    Heat the oil in a very large skillet (that has a cover); the heat setting should be a little over medium.
    When the oil is very hot, add the lamb, stirring periodically.
    Cover and cook about 10 minutes.
    Add the rice.
    Cover.
    Lower the heat to a setting between low and medium.
    Let this continue cooking for 30 minutes, stirring periodically.
    If the dish begins to dry out, add additional oil.
