Irish Potato Candy - cooking recipe

Ingredients
    1 potato (size of large egg), peeled
    1 (1 lb.) box confectioners sugar
    1 jar peanut butter (1 c.)
    1 1/2 tsp. vanilla
    pinch of salt
Preparation
    Boil potato until soft; mash.
    Add vanilla, salt and sugar. Mixture will be consistency of dough.
    Roll out onto oiled paper. Roll out with more powdered sugar to about the thickness of a pie crust.
    Spread with peanut butter; roll up like a jelly roll.
    Put in refrigerator for an hour; slice thin.
