Cold Weather Chili - cooking recipe
Ingredients

1 1/2 lb. lean beef chuck, cut into 1/2-inch cubes
2 Tbsp. oil
2 Tbsp. all-purpose flour
1 c. chopped onion
1 green or red pepper, chopped
1 Tbsp. minced garlic
1 1/2 c. beef broth
1/2 tsp. each: dried oregano leaves and cumin
1 Tbsp. chili powder
1/2 tsp. salt
1 c. tomato sauce
11/2 oz. unsweetened chocolate, coarsely chopped
Preparation

Heat oil in a Dutch oven or a heavy large saucepan.
Sprinkle the meat with flour.
Brown in oil.
Add a little extra oil to the browned meat, if needed.
Stir in onion, green pepper and garlic. Cook until soft.
Stir in the beef broth, oregano, cumin, chili powder and salt.
Bring to a boil, then reduce heat and simmer, covered, for 45 minutes.
Stir in tomato sauce and chocolate. Simmer, uncovered, for 25 to 30 minutes until thickened.
Serve hot.
