Fluffy Oatmeal Pancakes - cooking recipe

Ingredients
    1 c. buttermilk
    3/4 c. rolled oats coarsely chopped in blender
    2 tsp. frozen unsweetened apple juice concentrate
    1/2 tsp. pure vanilla extract
    1/4 c. whole wheat flour
    1/2 tsp. baking soda
    1 egg white stiffly beaten
Preparation
    Combine buttermilk and rolled oats, add apple juice and vanilla and let stand for a few minutes. Stir in flour that has been mixed with baking soda or baking powder. Fold in stiffly beaten egg white. Bake on nonstick griddle or skillet using 1/4 c. batter for each pancake.
