Quick Saucy Chicken Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. oil
    1 c. broccoli flowerets
    1 c. cauliflower
    3/4 c. 2-inch julienne-cut carrots
    1/4 c. green onion slices
    3 chicken breast halves, skinned, boned and cut into 1-inch pieces
    1/2 c. Miracle Whip
    1/2 tsp. ground ginger
    1 clove garlic, minced
    1 Tbsp. soy sauce
    hot cooked rice
Preparation
    In large skillet, heat 1 tablespoon oil over medium-high heat. Stir-fry veggies 4 to 5 minutes or until crisp-tender.
    Remove. Add remaining oil to skillet.
    Stir-fry chicken 4 minutes or until tender.
    Return veggies.
    Remove from heat.
    Add combined remaining ingredients and mix well.
    Serve over rice.
    Makes 4 servings.
