German Farm Bread(Deutsches Bauernbrot) - cooking recipe

3 pieces fresh yeast
0.2 liter water
0.4 liter milk
1 spoon salt
325 gram rye flour
450 gram wheaten flour
coffee, milk or sweet cream
Preparation

Dissolve the yeast in lukewarm water and admit lukewarm milk, salt and rye flour.
Knead the dough well.
Admit wheaten flour until the dough is supple.
Now the dough must rise 45 minutes. After that time form a bread of the dough.
Then let it rise again for 30 minutes.
Dab the bread with coffee, milk or sweet cream. Put the bread in the oven for 45 minutes at 440\u00b0.
Then put it on a rust until it is cold.
