Southwest Casserole - cooking recipe

Ingredients
    2 c. dry black turtle beans, soaked overnight*
    3 to 4 (14.5 oz.) cans chicken broth, divided
    1 c. uncooked brown rice
    1/3 c. uncooked wild rice
    4 (16 oz.) cans diced tomatoes with green chilies, drained
    1 red bell pepper, diced
    1 yellow onion, finely chopped
    2 cloves garlic, finely chopped
    green tops from 1 bunch onions, chopped fine
    1 can corn, drained
    1 to 1 1/2 tsp. cayenne pepper
    2 tsp. cumin
    salt and freshly ground pepper
    grated Monterey Jack and sharp Cheddar cheese
Preparation
    *May substitute 2 (15-ounce) cans Progresso black beans, drained.
