Eggplant A La Franscine - cooking recipe

Ingredients
    2 eggplant
    olive oil
    1/4 tsp. salt
    garlic clove
    1 Tbsp. Parmesan cheese
    1/2 sliced onion
    1/4 sliced green pepper
    2 Tbsp. bread crumbs
    tomato catsup
Preparation
    Cut eggplant in half and boil until soft.
    Remove and let cool.
    Remove pulp and smash it fine with fork.
    In the skillet, heat oil.
    Brown onion, pepper, garlic and pulp.
    Mix cheese, catsup and salt.
    Put mixture in the half shell eggplant. Sprinkle bread crumbs and brown under broiler.
