Greek Chicken Lemon Soup - cooking recipe
Ingredients

2 chickens
4 qt. water (approximately)
1 1/2 c. rice
1 onion
3 lemons
6 eggs (room temperature)
salt and pepper
Preparation
-
Quarter chickens.
Cover with water.
Simmer three hours or more.
Remove chicken.
Strain stock.
Finely chop onion.
Add onion and rice to stock.
Simmer until rice splits.
Allow stock to cool for 1/2 hour.
