Orange Sherbet - cooking recipe
Ingredients

3/4 c. sugar
3/4 c. water
grated rind of 1 orange
1 1/2 c. orange juice
1 Tbsp. lemon juice
1 c. coffee cream
2 egg whites
Preparation

Cook sugar and water slowly for 10 minutes.
Add grated rind to syrup and continue cooking 4 minutes.
Strain.
Add syrup to fruit juices.
Cool; pour into tray and allow to freeze firm. Remove mixture to ice cold mixing bowl.
Beat with mixer until light.
Add cream and fold in stiffly beaten egg whites to which salt has been added.
Freeze.
