Tortilla Eggs - cooking recipe
Ingredients

1 medium egg or egg substitute
1 Tbsp. water
2 corn tortillas, softened
1 Tbsp. shredded low-fat cheese
2 Tbsp. salsa
Preparation

Beat egg with water in a small bowl.
Lightly coat small skillet with nonstick cooking spray.
Heat over medium heat.
Pour in egg mixture; stir as egg begins to set.
Cook until set, but still moist.
Divide egg between tortillas; top with salsa and cheese and fold.
Makes 1 serving.
