Make Ahead Guacamole - cooking recipe

Ingredients
    1 envelope gelatin
    1/4 c. cold water
    1/2 c. boiling water
    1 Tbsp. lemon juice
    1 1/2 c. mashed ripe avocado
    1/3 c. mayonnaise
    3/4 tsp. salt
    2 Tbsp. finely minced onion
    1 small ripe tomato, seeded and diced (1/3 c.)
Preparation
    Sprinkle gelatin over cold water and let stand 5 minutes.
    Add 1/2 cup boiling water and stir until dissolved.
    Whisk in lemon juice, mashed avocado, mayonnaise and salt.
    Stir in minced onion and tomato.
    Turn into 3 cup mold or bowl.\tMake in a.m. and serve in p.m. and it will not darken.
