Ingredients

1/4 c. rice
4 c. milk
1/4 tsp. salt
1/3 c. sugar
1/2 tsp. vanilla
grated rind of 1/2 lemon
Preparation

Wash rice; mix ingredients and pour into buttered pudding dish.
Bake 3 hours in a very slow oven (250\u00b0).
Stir 3 times during the first hour of baking to prevent rice from settling.
