Zucchini Appetizers - cooking recipe
Ingredients

3 c. thinly sliced, unpeeled zucchini
1 c. baking mix
1/2 c. onion, finely chopped
1/2 tsp. salt
dash of pepper
1/2 c. vegetable oil
1/2 c. Parmesan cheese
2 Tbsp. parsley
1/2 tsp. oregano
1 clove garlic, chopped
4 eggs, slightly beaten
Preparation
-
Make your selection carefully.
Do not choose too young or green but mature and ripe, coming from good stock.
Do not keep in a stew or hot water or pickle.
This tends to make them sour, hard or bitter.
