Petite Cherry Cheesecakes - cooking recipe
Ingredients

42 vanilla wafers, finely crushed
3/4 c. sugar
16 oz. cream cheese, softened
2 eggs
1 Tbsp. lemon juice
1 tsp. vanilla extract
1 (21 oz.) can cherry pie filling
Preparation

Place crushed vanilla wafers in paper-lined miniature muffin cups.
Cream sugar, cream cheese, eggs, lemon juice and vanilla in mixer bowl until light and fluffy.
Pour into prepared muffin cups. Bake at 375\u00b0 for 15 to 20 minutes or until set.
Do not brown.
Top each warm cheesecake with 1 tablespoonful pie filling. Yield:
42 servings.
