Zucchini Relish - cooking recipe

Ingredients
    5 lb. zucchini
    6 large onions
    2 c. white vinegar
    1 tsp. dry mustard
    2 (4 oz.) jars chopped pimentos
    1/2 tsp. nutmeg
    1/2 c. salt
    1 c. sugar
    cold water
    2 tsp. celery seed
    1/2 tsp. cinnamon
    1/2 tsp. black pepper
Preparation
    Put zucchini and onions in food processor and chop fine.
    Mix with salt and place large bowl.
    Cover with cold water and refrigerate 4 hours or overnight.
    Drain, rinse and drain.
    In 6-quart pan, combine all ingredients.
    Bring to a quick boil, stirring constantly.
    Reduce heat and simmer 20 minutes or until reduced to 3 quarts.
    Place in jars.
    Then apply a hot water bath.
