Banana-Nut Muffins - cooking recipe
Ingredients

1/2 c. butter or margarine, softened
1 c. sugar
2 large eggs
2 large ripe bananas, mashed
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 c. buttermilk or soured milk
1/2 c. pecans, chopped
1 tsp. vanilla extract
Preparation

Preheat oven to 400\u00b0.
Grease 24 muffin cups or use paper liners.
Beat together butter and sugar until fluffy.
Add eggs and beat well.
Beat in bananas until smooth.
Mix together flour, baking powder and baking soda.
Alternately stir in flour mixture and buttermilk into egg mixture until just moistened.
Stir in nuts and vanilla.
Spoon into pans, filling cups 2/3 full.
Bake 15 to 18 minutes until golden.
