Bishops Cake - cooking recipe
Ingredients

3/4 c. vegetable shortening
1 1/2 c. granulated sugar
2 eggs
1 c. mashed banana pulp
1/2 tsp. salt
2 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 c. buttermilk
1 tsp. vanilla
1/2 c. pecans
1 c. flaked coconut
Preparation

Cream shortening and sugar until fluffy.
Add eggs and beat for 2 minutes at medium speed.
Add banana and beat again at medium for 2 minutes.
Sift together all dry ingredients and add to creamed mixture.
Add buttermilk and vanilla, beat 2 minutes. Stir in nuts.
Pour into 2 greased and floured 9 inch pans. Sprinkle top of each layer with coconut.
Bake in preheated 375 degree oven for 25 to 30 minutes.
Cool in pans 10 minutes, them remove and cool, coconut side up on racks.
