Arros Con Pollo(Rice With Chicken) - cooking recipe
Ingredients

2 chickens
3 c. white wine or beer
1 green pepper, chopped
1 to 2 bay leaves
2 cloves garlic
2 Tbsp. vinegar
1 can peas or frozen package
1 can asparagus
2 c. long grain rice
1 large onion, sliced
1/2 c. olive oil
1/2 tsp. cumin
2 tsp. salt to taste
1 can tomato sauce
1 can pimento with juice
bijol or saffron to taste
Preparation

Brown the chicken, add onions, green pepper, bay leaf, garlic, salt, vinegar, tomato sauce, olive oil (unless used to brown chicken), cumin and some wine or beer.
Cover to cook for 15 to 20 minutes on low heat.
Add rice and bijol or saffron.
Add rest of wine or beer, peas and asparagus.
Cover and put in oven at 325\u00b0 or finish cooking on top of the stove for 30 minutes.
Check, if rice is not fully cooked, add more wine or beer until rice is tender.
