The Ultimate Potato Soup For 8 - cooking recipe

Ingredients
    4 c. potatoes, peeled and cut into medium sized cubes, wash to remove starch
    1 c. chopped parsley, washed and squeezed
    1 c. minced onion
    4 Tbsp. shortening
    1 qt. chicken stock
    1 Tbsp. salt
    1 bay leaf
    1/2 tsp. ground black pepper
    2 c. cream
    4 Tbsp. flour
Preparation
    Melt shortening and saute the washed potatoes, parsley and onions. Cook, covered, on low heat for 15 to 20 minutes; do not add liquid. Add the stock and continue cooking; add salt, pepper and bay leaf. Whisk the cream and flour together and slowly add to boiling stock. Simmer for at least 30 minutes; remove bay leaf and serve. For added flavor, add a dollop of sour cream just before serving.
