Chicken Curry - cooking recipe

Ingredients
    8 oz. sour cream
    1 Tbsp. curry powder
    1 tsp. salt
    1 tsp. coriander
    1 tsp. minced ginger
    4 cloves minced garlic
    1/2 tsp. ground pepper
    1/2 tsp. lemon juice
    8 skinned chicken thighs
    2 Tbsp. shortening
    2 bay leaves
    1 medium onion, chopped
    1 large tomato, peeled and chopped
    8 oz. mushrooms (optional)
Preparation
    Mix together first eight ingredients.
    Marinate chicken in mixture for at least 30 minutes, but preferably a few hours. Refrigerate.
    Cook onion in shortening until it begins to color. If using mushrooms, add at this time and tomato and bay leaves. Cook 5 minutes.
    Add chicken and marinade and mix together.
    Cover and simmer for 30 minutes.
    Serves 4.
