Mexican Pork Chops - cooking recipe
Ingredients

6 thick loin cut pork chops
2 tablespoons vegetable oil
3/4 cup uncooked long grain rice
1/2 to 1 envelope of taco seasoning
8 oz tomato sauce
1 green pepper, cut into rings
1/2 cup shredded cheddar or monterey jack cheese
1/2 cup water
salt and pepper to taste
Preparation

Sprinkle chops with salt and pepper.
In skillet brown chops in oil over a medium heat.
In a 13x9 glass baking dish, combine rice, water, tomato sauce, and taco seasoning.
Place pork chops on top of rice mixture.
Top with pepper slices.
Cover and bake for 1 to 1 1/2 hours at 350 degrees.
Remove from oven and sprinkle with the cheese.
Return to oven until cheese is melted.
Serve.
