Spice Carrot Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 Tbsp. pumpkin pie spice
    1/2 tsp. salt
    1 c. flaked coconut
    3 eggs, beaten
    1/2 tsp. vanilla
    1 1/4 c. brown sugar
    2 tsp. soda
    2 c. shredded carrots
    1/2 c. chopped pecans or walnuts
    1 c. vegetable oil
    granulated sugar for topping
Preparation
    Preheat oven to 375\u00b0.
    Combine flour, brown sugar, pumpkin pie spice, soda and salt.
    In separate large bowl, combine remaining ingredients, except granulated sugar.
    Mix well.
    Add carrot mixture to flour mixture.
    Line muffin tins with paper baking cups.
    Spoon mixture into muffin cups.
    Sprinkle tops with granulated sugar.
    Bake 18 to 20 minutes until toothpick comes out clean.
    Makes 24 medium sized muffins.
