Ingredients
-
1 qt. warmed milk
2 c. sugar
1 c. shortening
3 tsp. salt
2 c. mashed potatoes
1/2 c. or little more warm potato water (not hot) to dissolve yeast
3 pkg. dry yeast, add pinch of flour and sugar (yeast should foam in about 5 to 10 minutes)
6 eggs, beaten
about 16 c. flour (sometimes a little more is needed depending upon how much water was with the mashed potatoes)
Preparation
-
Dough will be fairly stiff, but not dry.
Place container in a warm place to raise to at least double the size.
Always cover container with a double cloth to keep warm.
Letting it rise again after poking it down won't hurt it.
Yields approximately 7 dozen doughnuts.
