Sweet Potato Salad - cooking recipe
Ingredients

3 lb. sweet potatoes, cooked, peeled and cubed
1/2 c. finely chopped onion
1 c. chopped green pepper
1 1/2 tsp. salt (optional)
1/4 tsp. pepper
1 1/2 c. light or regular mayonnaise
dash of hot pepper sauce
Preparation

Combine first 5 ingredients in a large bowl. Stir in mayonnaise and hot pepper sauce; mix well. Cover and refrigerate at least 1 hour before serving. Yield: 10 servings.
