Zucchini Marmalade - cooking recipe

Ingredients
    6 c. peeled and ground zucchini
    6 c. sugar
    2 Tbsp. lemon juice
    1 (20 oz.) can crushed pineapple, well drained
    2 pkg. (3 oz. size) apricot Jell-O
Preparation
    Add 1 cup water to zucchini and boil for 6 minutes.
    Add sugar, lemon juice and pineapple.
    Boil for 6 more minutes.
    Add Jell-O; cook 6 more minutes.
    Pour into freezer containers.
    Cool and freeze.
    Yields 12 (1/2 pints).
