Crunchy Brown Rice - cooking recipe

Ingredients
    2 1/2 c. nonfat, low sodium chicken or vegetable broth
    3 to 4 green onions, chopped
    1 c. brown rice
    1 tomato, chopped
    1/4 c. fresh or frozen corn
    2 to 4 Tbsp. canned diced green chiles
    1 Tbsp. Dijon style mustard
    1/4 c. chopped water chestnuts
Preparation
    Combine stock or broth and green onions in saucepan.
    Bring to boil and add rice.
    Reduce heat, cover and simmer 45 minutes. Uncover.
    Stir in corn, tomatoes, chestnuts, green chiles and mustard.
    Serve warm.
