1 c. sugar
1/2 c. shortening
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 c. coconut
1 c. brown sugar
1/2 c. butter or oleo
1 egg
1 c. potato flakes (instant)
1/2 tsp. salt
1/2 c. chopped pecans
Preparation

Heat oven to 375\u00b0.
Combine sugar, brown sugar, shortening, oleo and vanilla until well blended.
Beat in egg.
Lightly spoon in flour, potato flakes, soda and salt until thoroughly combined. Stir in coconut and nuts.
Shape dough into 1-inch balls and flatten with sugared bottom of a glass.
Cook 6 to 8 minutes. Makes 4 to 5 dozen.
