Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. peeled and grated zucchini
    3 c. flour
    1 tsp. vanilla
    1 tsp. salt
    1 tsp. baking soda
    3 tsp. cinnamon
    1 1/4 tsp. baking powder
    1/2 c. chopped nuts
    1 c. diced dates (optional)
    1 c. raisins (optional)
Preparation
    Beat eggs until foamy.
    Add oil, sugar, zucchini and vanilla. Mix lightly, but well.
    Add flour, salt, soda, cinnamon and baking powder.
    Mix together.
    Add nuts; mix well.
    Divide batter into 2-greased loaf pans.
    Bake at 325\u00b0 for 1 hour or until toothpick comes out clean.
