Old Fashioned Potato Soup - cooking recipe

Ingredients
    2 c. finely diced potatoes
    1 large onion, diced
    ??? large ribs celery, finely cut
    1 small carrot, diced (optional)
    ??? c. water
    ??? tsp. salt
    1/8 tsp. pepper
    1/4 tsp. sugar
    3 slices bacon, diced and fried lightly
    2 Tbsp. bacon drippings
Preparation
    Combine all ingredients in a large kettle.
    Cover and bring to low boil on high heat.
    Reduce heat to simmer and cook very slowly, covered, for about an hour.
    For a chunkier version, cook 20 to 30 minutes.
    Serves 4 to 6.
    For low-fat, season with margarine or lean meat.
