Ingredients

1 1/2 Tbsp. powdered gelatin
1 lb. strawberries
1 3/4 to 2 c. or less sugar
6 egg whites
2 c. heavy cream
2 Tbsp. cognac
Preparation

Sprinkle gelatin in 1/4 cup of cold water to soften.
Meanwhile cook strawberries and sugar over a low heat for 15 minutes, until thickened.
Remove from heat and add softened gelatin, mixing well. Cool this mixture completely.
Stiffly beat egg whites.
In another bowl whip the cream and cognac together.
Stir gelatin mixture with the cream, then fold in the egg whites.
Mix well and chill. Serves 10.
