Have Another Helping Squash - cooking recipe
Ingredients

4 slices bacon
4 or more large yellow squash, sliced
5 or 6 green onions, sliced
1 egg, well beaten
1/2 c. sour cream
5 oz. or 1 1/4 c. shredded (medium or sharp) Cheddar cheese
Preparation

Fry bacon until crisp (drain, then crumble).
Saute squash and onions in bacon drippings (8 to 10 minutes).
Combine egg and sour cream, add to squash mixture, stir in bacon and cheese. Pour into shallow 2 quart casserole.
Bake at 350\u00b0 for 20 minutes or until bubbly.
You may garnish with shredded cheese or a sprinkling of paprika.
