Rise-And-Shine Refrigerator Muffins - cooking recipe
Ingredients

1 c. flour
3/4 c. unprocessed wheat bran
1/2 c. whole wheat flour
2 1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1/4 tsp. ground nutmeg
2 beaten eggs
1 c. milk
1/3 c. packed brown sugar
1/3 c. cooking oil
1/3 c. raisins or chopped dates
1/3 c. nuts (can be omitted)
Preparation

In large bowl, stir together first 7 ingredients.
Make a well in the center.
In medium bowl, combine eggs, milk, sugar and oil. Add all at once to flour mixture, stirring just until moistened (batter should be thick and lumpy).
Fold in raisins or dates and nuts.
Use batter immediately or store in a covered container in refrigerator up to 5 days.
