Gingered Carrots - cooking recipe
Ingredients

1 lb. carrots, peeled and sliced 1-inch thick
1 c. chicken broth
3 Tbsp. honey
2 Tbsp. butter/margarine
1 Tbsp. lemon juice
1 tsp. minced fresh ginger root
1/4 tsp. nutmeg
1/4 tsp. salt
Preparation

In skillet, combine carrots and chicken stock.
Bring to boil. Cover.
Reduce heat and simmer 10 minutes.
Drain.
Add remaining ingredients.
Cook over medium heat, stirring constantly, until carrots are glazed, about 2 minutes.
Can double recipe; freezes beautifully.
