Marinated New Potatoes - cooking recipe

Ingredients
    2 lb. small new potatoes, unpeeled
    2 (.7 oz.) pkg. Italian salad dressing mix
    1/4 c. minced green onions
    3 Tbsp. minced fresh parsley
    1 (2 oz.) jar diced pimiento, drained
    leaf lettuce
Preparation
    Cook potatoes in boiling water to cover 10 to 15 minutes or until tender. Drain and let cool. Cut potatoes into 1/4-inch slices. Arrange in a shallow serving dish. Set aside.
    Prepare salad dressing mix according to package directions. Stir in green onions, parsley and pimiento.
    Pour over potatoes. Cover and chill. Spoon potatoes over lettuce leaves, using a slotted spoon. Yields 8 servings.
