salt and pepper
Preparation

Sprinkle with salt and pepper.\tInsert meat thermometer into center of roast.
Let stand at room temperature.
Preheat oven to 375\u00b0.
Roast in oven one hour.
Turn off heat.
Do not open oven door for one hour.\tVery important.
During resting period, beef continues to cook slowly and evenly distributes heat throughout beef.
Turn oven regulator to 300\u00b0.
Allow roast to reheat 30 to 40 minutes until beef has reached desired internal temperature. Beef will be pink and juicy all the way through when it registers 130\u00b0.
