Eggplant Pizzas - cooking recipe

Ingredients
    1 1/2 lb. eggplant
    2 eggs, beaten
    2 c. bread crumbs
    cooking spray
    1 small green pepper, minced
    4 oz. mushrooms, sliced
    2 Tbsp. vegetable oil
    2 c. tomato sauce
    1 tsp. dried oregano
    6 oz. Mozzarella cheese, shredded
Preparation
    Wash eggplant.
    Cut off ends.
    Leave skin and cut in 1/3-inch slices.
    Dip in egg, then bread crumbs.
    Place on baking sheet sprayed with cooking oil.
    Broil until crumbs are brown, about 1 minute per side.
    Saute pepper and mushrooms in vegetable oil.
    Set aside.
    Place spoonful of sauce and a pinch of oregano on each. Add peppers and mushrooms.
    Top with cheese.
    Broil until cheese melts, 1 minute.
