Eggplant Fritters - cooking recipe

Ingredients
    4 small eggplants, peeled and chopped
    1/2 small can evaporated milk
    2 large eggs, slightly beaten
    2 tsp. vanilla
    2 tsp. baking powder
    6 or 7 heaping Tbsp. flour
    enough oil for frying
Preparation
    Boil, drain, then mash eggplants.
    Add all remaining ingredients and mix well.
    Drop by large spoonfuls in hot oil and fry until golden.
    Drain on paper towel.
    Serve warm.
