Cream Of Leek Soup - cooking recipe

Ingredients
    3 leeks (white part only), shredded
    1/2 large onion, chopped
    1 stick margarine, melted
    2 c. chicken broth
    2 large potatoes, shredded
    1 c. light cream (or half and half or milk)
    1 c. chicken stock (more if too thick)
    parsley, bacon bits to garnish
Preparation
    Saute leeks and onion in 2-quart pot in margarine for 10 minutes.
    Add 2 cups broth and shredded potatoes.
    Cook for 30 minutes.
    Remove 1/2 and puree.
    Return to other 1/2 and add cream and chicken stock (more if too thick).
    Serve and sprinkle with parsley and bacon bits.
