Cajun Shrimp Creole - cooking recipe

Ingredients
    1/4 c. olive oil
    2 Tbsp. all-purpose flour
    1 c. onion, chopped medium
    1/2 c. bell pepper, chopped medium
    2 Tbsp. garlic, minced
    1/2 c. parsley flakes, double if fresh
    1 tsp. cayenne pepper, adjust to taste
    1/4 tsp. black pepper
    1/2 tsp. salt
    2 c. shrimp, cleaned and deveined
    1/4 c. tomato paste
    1 c. tomato sauce
    1 c. water
Preparation
    In a 10 inch skillet, heat oil.
    Add flour, stir on medium heat until flour begins to brown.
    Add onion, bell pepper, garlic, parsley, cayenne, black pepper and salt.
    Simmer on medium heat until onion is limp and clear.
    Add shrimp, cook until all shrimp are pink.
    Add tomato paste, tomato sauce and water.
    Simmer 20 minutes on low heat.
    Serve over rice.
    Serves 3 to 4.
