Cuban Chicken With Black Bean Sauce - cooking recipe

Ingredients
    1 chicken, cut up
    2 cloves garlic, minced
    1 medium diced onion
    2 cans black beans, undrained
    1 medium red bell pepper, diced
    cayenne to taste
Preparation
    Place chicken, skin side down, in hot skillet.
    Cover, turn down heat and brown for 10 minutes.
    Remove chicken to plate.
    Add onions, garlic and bell pepper to pan.
    Saute for 2 minutes.
    Add beans and chicken.
    Add enough water to simmer chicken.
    Add cayenne to taste.
    Cook about 30 minutes or until done.
    Serve over hot rice.
