Zucchini Bread - cooking recipe

Ingredients
    2 c. all-purpose flour
    3/4 tsp. baking powder
    3/4 tsp. baking soda
    3/4 tsp. salt
    3/4 tsp. cinnamon
    3 eggs
    1 c. sugar
    2/3 c. vegetable oil
    1 1/3 c. grated, unpeeled zucchini
    3/4 tsp. lemon extract
    2/3 c. chopped pecans
    2/3 c. raisins
Preparation
    Sift together flour, baking powder, baking soda, salt and cinnamon.
    Set aside.
    Beat eggs and sugar for 2 minutes. Gradually add oil and beat 2 minutes.
    Add extract.
    Alternately fold in flour mixture and zucchini until evenly
    moistened.
    Stir in pecans and raisins.
    Do not overmix.
    Pour into well-greased or sprayed loaf pan.
    Bake at 350\u00b0 for 1 hour and 10 minutes or until it tests done.
    Cool 10 minutes.
    Remove from pan.
    Cool.
