Mixed Fruit Compote - cooking recipe

Ingredients
    1/2 c. dried pitted prunes
    1/2 c. dried apricots
    1 c. apple juice
    1 stick cinnamon about 2 inches long
    1 Tbsp. grated orange rind
    1 orange, peeled, sectioned and chopped
    1 Granny Smith apple, peeled, cored and chopped
    1 banana, sliced
    1/2 c. orange juice
    1 to 2 Tbsp. brown sugar
    3 Tbsp. chopped walnuts, toasted
Preparation
    Combine prunes and apricots in a bowl; set aside.
    Heat apple juice with cinnamon stick in small saucepan over medium heat until hot.
    Pour over prunes and apricots.
    Cover and let stand 8 hours. Remove cinnamon stick and add orange rind and next 5 ingredients; toss gently.
    Sprinkle with walnuts.
    Makes 6 to 8 servings.
