Confetti Rice - cooking recipe

Ingredients
    1/2 lb. sliced bacon, diced
    1 c. long grain rice, cooked
    1 c. diced carrots
    1 c. diced celery
    1/2 c. fresh or frozen peas
    soy sauce (optional)
Preparation
    Slightly cook carrots and celery; drain and set aside.
    In a large skillet, cook bacon until crisp.
    Remove to paper towels. Drain all but 3 tablespoons of drippings.
    Add rice, carrots, celery and peas.
    Cook until heated through, about 5 to 7 minutes. Stir in bacon.
    Serve with soy sauce, if desired.
    Makes 6 to 8 servings.
