Stuffed Eggplant Rolls - cooking recipe

Ingredients
    2 medium eggplants
    2 eggs, beaten
    olive oil
    1/2 lb. sliced Mozzarella cheese
    1 lb. Ricotta cheese, mixed with 1 Tbsp. finely chopped parsley
    2 c. marinara sauce
Preparation
    Wash eggplant, remove stems, peel and slice.
    Dredge eggplant in flour, dip in beaten eggs and fry until golden brown.
    Pat dry.
