Asparagus And Turkey Quesadillas - cooking recipe

Ingredients
    8 plum tomatoes
    16 asparagus spears
    2 Tbsp. olive oil
    2 cloves garlic, finely chopped
    1 c. chicken stock
    8 medium size flour tortillas
    8 thin slices turkey breast
    8 thin slices cheese of choice
    salt and pepper to taste
    1 c. grated sharp cheese
Preparation
    Preheat oven to 425\u00b0.
    Bring 2 quarts of water to boil.
    Add plum tomatoes for 1 minute, remove to colander and refresh under cold water.
    Peel tomatoes, chop and set aside.
    Blanch asparagus in same water for 2 to 3 minutes.
    Refresh under cold water; set aside.
    Heat olive oil in saute pan until hot.
    Add garlic and tomato; saute for 2 minutes.
    Season well with salt and pepper. Remove from heat; set aside.
