Hearty Vegetable Soup - cooking recipe

Ingredients
    water
    4 to 5 carrots, sliced
    3 to 4 celery, sliced
    4 to 5 potatoes, chunked
    2 onions
    4 to 5 cloves fresh garlic
    1 bag frozen mixed vegetables or fresh
    1 to 2 c. texture vegetable protein beef chunks
    shiitake mushrooms, rehydrated (optional) *
    3 tsp. parsley flakes
    1/4 tsp. oregano
    1/2 tsp. basil
    about 1/2 Tbsp. Vegex (until water turns rich golden brown)
Preparation
    *To rehydrate mushrooms, cover in hot water for 2 minutes; clean and chop.
